Abstract

Game meat is a specific but underrepresented element of Hungarian gastronomic traditions, whose role can be brought to the fore again in today's sustainable food consumption and education systems. This study takes an interdisciplinary approach to the role of game meat in Hungarian gastronomy, public consumption attitudes, spatial inequalities in restaurant supply, and the game meat content of cookery and catering education. The research was conducted using a combination of quantitative and qualitative methods, including questionnaire surveys, menu analysis, and interviews. The authors aim to demonstrate the potential of repositioning wild meat in gastronomy and education, and to identify communication, market development, and knowledge transfer tools that can contribute to expanding domestic consumption of wild meat.
